FILO PASTRY

Filo pastry is a paper-thin sheet of dough and is one of the basic ingredients of Greek baking. It also goes by the names Fillo or Phyllo. Filo pastry is very elastic and by folding it, rolling it or stacking, it can assume different shapes that allow many variations of the same dish.
Filo pastry is lighter and more healthy than puff pastry, since it contains no butter or margarine and olive oil is usually used for baking it.
